Crab Juice Recipe from The Simpsons

Ingredients
- 500g crab shells and bodies (from cooked crabs)
- 1 liter water
- 1 celery stalk
- 1 small onion, quartered
- 2 bay leaves
- 1 tsp whole peppercorns
- 1 tsp salt
- Ice
- Lemon wedges
- Hot sauce (optional)
- Celery stalks for garnish
- 1 bottle clam juice
- Crab boil seasoning
- Ice and lemon
Method
- 1Make the BrothCombine crab shells, water, celery, onion, bay leaves, peppercorns, and salt in a large pot. Bring to a boil, then reduce to a simmer. Cook for 30 minutes. The liquid should take on a slight seafood flavor and pale color. Don't cook longer or it becomes bitter. Strain through a fine mesh strainer. Discard solids. Let cool to room temperature, then refrigerate until cold.
- 2Quick VersionIf you don't have crab shells, use bottled clam juice as a base. Add a pinch of crab boil seasoning (Old Bay works). Chill thoroughly. This isn't as authentic but achieves similar results with less effort.
- 3ServePour cold crab broth over ice in a tall glass. Add a squeeze of lemon. Garnish with a celery stalk. For extra authenticity, serve it from a cart with questionable hygiene standards. Hot sauce is optional but recommended. The spice cuts through the briny flavor.
