Ingredients
- 500g ground lamb or beef
- 1 medium onion, finely grated
- 2 cloves of garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon ground coriander
- 1/4 teaspoon cayenne pepper (or to taste)
- Salt and black pepper to taste
- Wooden or metal skewers
- 1 cup Greek yogurt
- 1 tablespoon lemon juice
- 1 clove of garlic, minced
- 1/2 cucumber, finely diced
- Salt and pepper to taste
Method
- 1Combine the Ingredients: In a bowl, mix together the ground meat, grated onion, minced garlic, cumin, paprika, coriander, cayenne, salt, and pepper.
- 2Skewer the Meat: Wet your hands to prevent sticking, and mold the meat around each skewer, forming a sausage-like shape that's evenly distributed along the stick.
- 3Cook the Skewers: Grill the skewers on a preheated barbecue or griddle pan over medium heat. Rotate them regularly to ensure even cooking and a charred exterior, about 3-4 minutes per side.
- 4Mix the Sauce Ingredients: In a bowl, whisk together the Greek yogurt, lemon juice, minced garlic, and diced cucumber. Season with salt and pepper to taste.
- 5Refrigerate: Let the sauce cool in the fridge for at least half an hour before serving to allow the flavors to blend.
